The Sun Never Sets: Cuisine Inspired by the British Empire Dinner

This pop-up will paint a dramatic picture of how England's expansion meshed together distinctly different cultures, particularly food cultures. Many aren't aware that by 1921, the Empire encompassed  1/4 of Earth's total land area, which inspired the phrase "the sun never sets on the British Empire." The result: fruits, vegetables, proteins, and spices were combined in new and surprising ways.
        Two popular Southern chefs based in Atlanta -- Matthew Basford of Canoe and Nick Leahy of Saltyard -- are teaming up with America's most innovative supper club, Dinner Lab, for an unforgettable mash-up of global flavors. Both born and trained in the Commonwealth and kitchens of London, these young globe-trotters will share contemporary riffs on several old world favorites (menu below) that reflect their diverse backgrounds. Basford hails from Australia where he was awarded Second Place in Tasting Australia before coming to the Mainland, and Leahy is a Bermuda-born, British-trained chef who has cooked all over the globe, including a stint as Executive Chef at England's Daylesford Organic, a restaurant and farm that solely uses its own homegrown, organic ingredients (including fruits, vegetables, dairy and cattle).
        This event is part of the Southern Chef Exposure Dinner Series; a partnership between Dinner Lab and Georgia-based poultry producer Springer Mountain Farms that facilitates pop-up opportunities across the country for the foremost chefs on the Southern culinary scene. Previous events have featured Chefs Todd Richards of White Oak Kitchen + Cocktails and Todd Ginsberg of The General Muir, among others.

Locations for Dinner Lab events are undisclosed until 48 hours before the event, but this event will take place somewhere in Brooklyn.

Rathbun’s Chef de Cuisine Recognized for Culinary Excellence

Georgia-Based Springer Mountain Farms Recognizes Nick Anderson with Celebrate the Chef Award

Nick Anderson, Chef de Cuisine of the much acclaimed Rathbun’s Restaurant in Atlanta, Georgia, has received the highest honor bestowed by Georgia-based poultry producer Springer Mountain Farms; its Celebrate the Chef Award. This award has been presented to a select handful of chefs that demonstrate culinary excellence, consistency in the dining experience and a commitment to the local community.

“Chef Anderson’s combination of community involvement, support for our company’s high school culinary internship program and his passion for cooking elevated him from the competition,” said Dale Faunce, Marketing Director at Springer Mountain Farms. “He loves what he does and it truly shows in his dishes.”
At the young age of 19, Chef Nick Anderson graduated Magna Cum Laude from Johnson & Wales with a degree in Culinary Arts and a James Beard Scholarship. By 21, he was Sous-Chef at one of Atlanta’s longtime favorite restaurants, Canoe. A few short years later, he earned the title Chef de Cuisine at the esteemed Rathbun’s, where he continues to make his mark by adding new dishes such as ahi tuna and carpaccio, while also updating some of Chef Kevin Rathbun’s signature dishes, like the duck breast and the Springer Mountain Roast Chicken.

“It’s an honor to be recognized by the folks at Springer Mountain Farms with this award,” said Anderson. “We started using their chicken because we know where it comes from and it tastes great, and the relationship has turned into a wonderful partnership where I’m able to get out of the kitchen and support the local community.”

Celebrate the Chef Award winners are provided valuable media opportunities from magazines to food festival appearances, and a customized television commercial that runs on local network stations. With program support, Anderson will soon realize a long-held dream of giving back when he hosts his own Friends of James Beard Dinner. This event will raise money to fund culinary scholarships, a perfect circle, as it was a Beard Scholarship that made it possible for Chef Nick to attend his alma mater: Johnson & Wales.

Each quarter, Springer Mountain Farms recognizes a local chef for culinary excellence with its Celebrate the Chef Award. Winners receive a number of valuable media opportunities, from magazines, food festival appearances and a customized television commercial that runs on local network stations. The criteria for selecting winning chefs includes culinary technique, innovation, quality of dining experience and community involvement. The coveted award is presented separately in five different markets: Atlanta, Nashville, Charlotte, Chattanooga and Savannah. Past winners include multiple James Beard Award winners such as Tandy Wilson, Todd Richards, Todd Ginsburg, Asha Gomez and Bruce Moffet. The Celebrate the Chef Award Program is one of several outreach programs sponsored by Springer Mountain Farms that aim to educate and increase awareness on the benefits of eating healthy and locally sourced food.
