- "From Russia with Love," smoked salmon mousse in a phyllo cup with crème fraîche and UGA caviar ($14) paired with Freixenet Codorniu Negro ($12)
- "House of the Rising Sun," tuna tartare, crisp cucumber wheel, Sriracha crema, avocado and UGA caviar paired with Codorniu cava ($13)
