Chocolate Lavender Cheesecake Lollipops

Yield: varies depending upon size of cutter

Chocolate Lavender Cheesecake
4          ounces unsalted butter
1          tablespoon lavender flowers
2          pounds cream cheese
4          ounces sugar
8          ounces sour cream
6          eggs
12       ounces milk chocolate
6          ounces white chocolate
            Graham Crust (recipe included)

For the Chocolate Lavender Cheesecake
Preheat oven to 300 degrees. Melt butter and pour over lavender flowers. Cover vessel with plastic film and place in a warm spot to “steep.” Melt white and milk chocolates together and set aside in a warm spot. Cream together cream cheese and sugar; scraping well and often. Whisk eggs into sour cream. This mixture should be added to cream cheese in 3 increments, scraping the bowl well in between each addition. Strain lavender flowers from butter, pour butter over melted chocolate and fold together. In 2 additions — using half the cream cheese mixture each time — fold cream cheese into chocolate, working quickly and firmly to break up any chocolate that might clump together. Pour cheesecake batter over crust to the top of the sheet pan or to a 1 1/4-inch depth. Bake uncovered for 12 to 15 minutes.

Graham Crust
1          pound graham cracker crumbs
4          ounces granulated sugar
8          ounces melted butter

For the Graham Crust
In a suitable mixing bowl, whisk together crumbs and sugar. Stir in butter. Pack graham crust to an approximate 1/4-inch depth in a sheet pan.

Assembly
Allow cake to cool to room temperature; then allow it to set to a very firm consistency in the freezer. Carefully remove cake from sheet pan. When the consistency of the cheesecake allows, punch lollipops out with a cookie cutter. This is easier if the cheesecake is still slightly frozen. Allow the cheesecake to thaw enough that it will accept a lollipop stick without cracking. Freeze lollipops completely. Once frozen, dip them in your choice of coatings and decorate as desired.
