Cornbread Fritters

Recipe by Suzanne Vizethann, Executive Chef/Owner,
The Hungry Peach

   1 1/4 cups self-rising corn meal mix
   1 teaspoon salt
   1 1/4 cups all-purpose flour
   1/2 teaspoon baking soda
   1/4 cup sugar
   2 eggs
   1 cup whole milk
   1 stick butter, melted
   oil for frying

For the Cornbread Fritters
Mix corn meal, salt, flour, soda and sugar together in a mixing bowl. Whisk together eggs and 
milk and slowly add to flour mixture. Pour in melted butter and mix until batter is incorporated. 
Drop tablespoons of batter into hot oil until cooked all the way through. (Makes about 12 fritters.)
