Bar-B-Q Brisket Chili (recipe included) shredded cheddar cheese, as needed diced red onion, as needed fresh sliced jalapeños, as needed (optional) sour cream, as needed Cut open each Fritos bag from top or side, ladle chili over Fritos, add cheddar cheese, diced onion, jalapeños and a dollop of sour cream. Mix it up and eat! Or, pour Fritos into a bowl and repeat the steps above! Fox Bros. Bar-B-Q Brisket Chili Yield: 4–5 quarts 1 tablespoon olive oil or canola oil 1 tablespoon butter 2 cups finely diced onion 3/4 cup seeded and chopped jalapeños (leave seeds for more heat) 2 tablespoons minced garlic 1/2 tablespoon kosher salt 1 teaspoon black pepper 1 28-ounce can high-quality crushed tomatoes 1 1/2 tablespoons tomato paste 32 ounces homemade or high-quality beef stock 5 tablespoons high-quality chili powder 1 1/2 tablespoons kosher salt 1/2 tablespoon granulated garlic powder 1/2 tablespoon granulated onion powder 1/2 tablespoon black pepper 1/2 tablespoon chipotle powder 1/2 tablespoon white sugar 2 tablespoons adobo sauce (from canned chipotle in adobo) 1/4 teaspoon cumin 1 pound chopped brisket 2 tablespoons Maseca Instant Masa Corn Flour For the Fox Bros. Bar-B-Q Brisket Chili In a heavy-bottom medium-sized pot, add first 7 ingredients through pepper. Sweat until tender, then, add remaining ingredients except brisket and corn flour. Bring to a boil, reduce heat and simmer for 20 minutes. Stir in brisket. In 1 cup warm water, add corn flour and stir to make a slurry. Add slurry to chili and simmer for 5 to 10 minutes, stirring often to prevent meat from settling on bottom. |
