Hot Pimento Cheese Dip

Yield: 2 to 2 1/2 cups

3/4 cup mayonnaise
1    teaspoon sugar
2    cups (8 ounces) shredded mild cheddar cheese*
1    2-ounce jar diced pimentos, well drained
6-8 slices bacon, cooked crisp and chopped
1–2 Roma tomatoes, peeled and chopped pita chips for serving

In a medium bowl, whisk mayonnaise and sugar. Add cheese and pimento, combining well. Preheat broiler to low setting. Spread desired amount of pimento cheese 1/2 to 3/4 inch
deep onto an ovenproof serving plate. Sprinkle chopped bacon and tomato to taste over top and place under broiler until mixture is hot and beginning to bubble. Serve hot with pita chips.
*Grate your own cheese. Pre-shredded will change the flavor.
